7-Layer Cookies

Peer pressure is a terrible thing.  You’ve all made me decide to say, “we’ve been cookieless at Christmas long enough”.  Fine then.  I’ll just have to go find some GF graham crackers so I can make these.

Preposterously easy recipe, and yes – you can sub things or pull things as long as you don’t get crazy about it.  (In other words, fewer than 5-6 layers just doesn’t work – but I regularly do a coconut free version for DH and a chocolate free version for my dad, and those are good).  THERE IS NO SOCIALLY REDEEMING VALUE IN THESE.  None.  Embrace the sugar high, and cut them small.

7 Layer Cookies

  • 1/4 lb butter, melted
  • 1 cup graham cracker crumbs
  • 1 cup coconut, shredded
  • 6 oz chocolate chips
  • 6 oz butterscotch chips
  • 14oz sweetened condensed milk
  • 1 cup chopped pecans

Pour melted butter in the bottom of a 9×13 pan.  Sprinkle over the butter the remaining ingredients, in layers, in order given.  Bake at 350 degrees for 30 minutes.  Cool.  Cut into small squares.  (You’re aiming for 48 squares of insanity).
